Cabbage Soup Recipe:

Ingredients:
- 1 medium-sized cabbage, shredded
- 2 onions, finely chopped
- 3 carrots, diced
- 3 potatoes, peeled and cubed
- 2 cloves of garlic, minced
- 1 can of diced tomatoes
- 4 cups of vegetable broth
- 1 bay leaf
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- Fresh parsley, for garnish

Instructions:
1. In a large pot, heat some oil over medium heat. Add the onions and garlic, and sauté until they become translucent.
2. Add the carrots and potatoes, and cook for about 5 minutes, stirring occasionally.
3. Stir in the shredded cabbage and let it cook for another 5 minutes until it wilts slightly.
4. Add the diced tomatoes, vegetable broth, bay leaf, dried thyme, salt, and pepper. Stir well.
5. Bring the soup to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 30-40 minutes until the vegetables are tender.
6. Check the seasoning and adjust if necessary.
7. Serve hot, garnished with fresh parsley.
