Cottage cheese dumplings (kopytka) recipe:

Ingredients:
- 500g potatoes, peeled and boiled until soft
- 200g flour
- 150g cottage cheese
- 1 egg, beaten
- Salt, to taste
- Butter, for frying

Instructions:
1. Mash the boiled potatoes until smooth in a large bowl.
2. Add the flour, cottage cheese, beaten egg, and salt to the mashed potatoes. Mix well until you have a smooth, pliable dough.
3. On a floured surface, roll out the dough into a long, thin log.
4. Cut the dough log into small, equal-sized pieces, shaping them into small dumplings.
5. Bring a large pot of salted water to a boil.
6. Drop the dumplings into the boiling water and cook for about 5-6 minutes, or until they float to the surface.
7. Once the dumplings are cooked, remove them from the water using a slotted spoon and place them on a platter.
8. In a separate pan, melt some butter over medium heat.
9. Add the cooked dumplings to the pan and fry them until they are golden and crispy on the outside.
10. Serve the delicious cottage cheese dumplings (kopytka) hot with your favorite sauce or topping. Enjoy!
