Przepis na leczo po angielsku 📖

Leczo (Polish Vegetarian Stew) recipe:

Ingredients:
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 green bell pepper, diced
- 2 medium zucchini, diced
- 2 carrots, diced
- 4 tomatoes, diced
- 2 tablespoons tomato paste
- 1 teaspoon sweet paprika
- 1/2 teaspoon hot paprika (optional)
- 1 teaspoon dried marjoram
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)

Instructions:
1. Heat the vegetable oil in a large pot or deep pan over medium heat.
2. Add the chopped onion and minced garlic, and sauté until golden brown.
3. Add the diced red, yellow, and green bell peppers to the pot, and cook for about 5 minutes until they soften.
4. Next, add the diced zucchini and carrots, and continue cooking for another 5 minutes.
5. Stir in the diced tomatoes and tomato paste until well combined.
6. Season with sweet paprika, hot paprika (if using), dried marjoram, salt, and pepper. Mix everything together.
7. Reduce the heat to low, cover the pot, and let the stew simmer for about 30 minutes. Stir occasionally to prevent sticking.
8. Once the vegetables are tender and the flavors have melded together, remove from heat.
9. Serve hot, garnished with freshly chopped parsley.
