Cheesecake (no-bake recipe):Ingredients:
- 300g digestive biscuits
- 125g butter, melted
- 500g cream cheese
- 200ml heavy cream
- 150g powdered sugar
- 1 teaspoon vanilla extract
- Juice of 1 lemon
- 10g gelatin powder
- 3 tablespoons water
- Fresh fruits (optional) for topping
Instructions:
1. Crush the digestive biscuits into fine crumbs using a food processor or by placing them in a plastic bag and rolling with a rolling pin.
2. In a bowl, mix the biscuit crumbs with melted butter until well combined.
3. Press the biscuit mixture into the bottom of a greased 9-inch springform pan, creating an even crust. Place it in the refrigerator to chill.
4. In a mixing bowl, beat the cream cheese until smooth and creamy.
5. In a separate bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and continue beating until stiff peaks form.
6. Gently fold the whipped cream into the cream cheese mixture, along with vanilla extract and lemon juice.
7. In a small microwave-safe bowl, combine the gelatin powder and water. Let it sit for a few minutes to bloom. Microwave for about 10-15 seconds until the gelatin is fully dissolved.
8. Slowly pour the dissolved gelatin mixture into the cream cheese mixture while continuously mixing.
9. Remove the crust from the refrigerator and pour the cream cheese mixture over it. Smooth the top with a spatula.
10. Cover the pan with plastic wrap and refrigerate for at least 4 hours or overnight until the cheesecake sets.
11. Before serving, remove the sides of the springform pan and transfer the cheesecake to a serving plate. Top with fresh fruits if desired.
