Traditional Polish pierogi ruskie recipe:

Ingredients:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup warm water
- 2 medium potatoes, peeled and boiled
- 1 small onion, finely chopped
- 1 cup farmer's cheese or cottage cheese
- Salt and pepper to taste
- Optional: sour cream and chopped chives for serving

Instructions:
1. In a large bowl, combine the flour and salt. Gradually add the warm water while mixing until a dough forms.
2. Knead the dough on a floured surface for about 5 minutes until it becomes smooth and elastic. Cover with a damp cloth and let it rest for about 30 minutes.
3. In a separate bowl, mash the boiled potatoes until smooth. Add the chopped onion and cheese. Mix well. Season with salt and pepper to taste.
4. Roll out the dough on a floured surface to about 1/8 inch thickness. Using a round cookie cutter, cut out circles of dough.
5. Spoon about 1-2 teaspoons of the potato-cheese filling onto each dough circle. Fold the dough over the filling to form a half-moon shape. Press the edges together firmly to seal.
6. Bring a large pot of salted water to a boil. Gently drop the pierogi into the boiling water and cook for about 3-5 minutes, or until they float to the surface. Remove with a slotted spoon and drain.
7. Serve the pierogi warm with a dollop of sour cream and a sprinkle of chopped chives, if desired.
