Fruit cake recipe:

Ingredients:
- 250g all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 180g unsalted butter, softened
- 200g granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 120ml milk
- 200g mixed dried fruit (such as raisins, currants, chopped dates)
- 100g chopped nuts (such as walnuts or almonds)

Instructions:
1. Preheat the oven to 180°C (350°F). Grease and flour a 9-inch round cake pan.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
4. Beat in the eggs, one at a time, ensuring each is well incorporated before adding the next one. Stir in the vanilla extract.
5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing just until combined.
6. Fold in the mixed dried fruit and chopped nuts.
7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
8. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
