Karpatka (Polish Cream Puff Cake) RecipeIngredients:
- 1 cup all-purpose flour
- 1 cup water
- ½ cup unsalted butter
- 4 eggs
- A pinch of salt
For the Vanilla Custard Filling:
- 2 cups whole milk
- ½ cup granulated sugar
- 4 egg yolks
- ¼ cup cornstarch
- 2 teaspoons vanilla extract
For the Icing:
- 1 cup powdered sugar
- 1-2 tablespoons water
Instructions:
1. Preheat your oven to 400°F (200°C). Grease a baking sheet or line it with parchment paper.
2. In a medium-sized saucepan, combine water, butter, and salt. Bring to a boil over medium heat.
3. Remove the mixture from heat and add flour all at once. Stir vigorously until the dough forms a ball and pulls away from the sides of the pan.
4. Beat in the eggs, one at a time, making sure each egg is fully incorporated before adding the next one. Continue mixing until the dough is smooth and glossy.
5. Transfer the dough onto the prepared baking sheet and spread it evenly, forming a rectangular shape.
6. Bake for 30-35 minutes, or until the crust is golden brown and puffed. Do not open the oven door during the first 25 minutes of baking to prevent the collapse of the cake.
7. While the cake is baking, prepare the vanilla custard filling. In a saucepan, heat the milk until hot but not boiling.
8. In a separate bowl, whisk together the sugar, egg yolks, and cornstarch until well combined.
9. Slowly pour the hot milk into the egg mixture, whisking constantly.
10. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and comes to a boil. Remove from heat, add the vanilla extract, and let it cool.
11. Once the cake is cooled, slice it in half horizontally, creating two rectangular layers.
12. Spread the vanilla custard evenly over the bottom layer of the cake.
13. Place the top layer of the cake back on the custard, pressing gently.
14. In a small bowl, whisk together powdered sugar and water to create a glaze. Drizzle the glaze over the top of the cake.
