Recipe for Polish Ruskie Pierogi:Ingredients:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup lukewarm water
- 2 medium potatoes, boiled and mashed
- 1 cup farmer's cheese (or cottage cheese), drained
- 1 small onion, finely chopped
- Salt and pepper to taste
- Fresh dill (optional)
- Sour cream (to serve)
Instructions:
1. In a large bowl, combine flour and salt. Make a well in the center and add the egg. Gradually mix in water until the dough comes together.
2. Knead the dough on a floured surface until smooth and elastic. Wrap in plastic wrap and let rest for 30 minutes.
3. Meanwhile, in a separate bowl, combine mashed potatoes, farmer's cheese, chopped onion, salt, and pepper. Mix well until all ingredients are evenly incorporated.
4. Roll out the dough to about 1/8 inch thickness. Using a round cookie cutter or a glass, cut out circles from the dough.
5. Place a spoonful of the potato-cheese filling in the center of each dough circle. Fold the dough in half and seal the edges by pressing with a fork.
6. Bring a large pot of salted water to a boil. Cook the pierogi in batches for about 3-5 minutes or until they float to the surface.
7. Remove the cooked pierogi with a slotted spoon and transfer to a serving dish.
8. Serve hot, garnished with fresh dill (if desired) and accompanied by sour cream for dipping.
